path to plant-based : a week of vegan breakfasts

Hey there, lovely people! Today I'm here to report on week one of my path to plant-based plan, one of my major goals for 2013.

This past week was all about vegan breakfasts. My strategy for the week was to make yummy, filling smoothies that I could make ahead and have ready in the fridge to grab and go each morning. So really, I only had to prepare smoothies three times this week, and I just made enough to last me two or three days. SUPER convenient!

Janelle also made Oh She GlowsBlueberry Banana Pie Vegan Overnight Oats one day for us to try and it was yummmmm!

In short, week one was a success! Having a vegan breakfast everyday was quick, convenient, and delicious. 

This week, on to plant-based dinner!

    Make-Ahead Oatmeal, Apple and Peanut Butter Smoothies

  2. Ditch the almond milk and peanut butter. It's acid-forming.
