This past week was all about vegan breakfasts. My strategy for the week was to make yummy, filling smoothies that I could make ahead and have ready in the fridge to grab and go each morning. So really, I only had to prepare smoothies three times this week, and I just made enough to last me two or three days. SUPER convenient!

- Make-Ahead Oatmeal, Apple and Peanut Butter Smoothies from Cheap & Simple Vegan
- Peanut Butter Cup Smoothie from Happy Herbivore
- Cinnamon Bun Smoothie from Happy Herbivore
Janelle also made Oh She Glows' Blueberry Banana Pie Vegan Overnight Oats one day for us to try and it was yummmmm!
In short, week one was a success! Having a vegan breakfast everyday was quick, convenient, and delicious.
This week, on to plant-based dinner!
